I'm in a lunch rut - gimme ideas!

I'm tired of the same ol' same ol' - Lean cuisine or ham sandwich.  I need some good, yummy and preferably healthy lunch ideas.  I work at home so I have a full kitchen - so I know I have lots of options - just can't think of anything.  Even if y'all have ideas to make ahead and portion out... that would be good, too.

  • PB & J sandwich with apple slices

    Roasted Pine Nut Hummus (Sabra brand) and baked pita chips w/ half an avocado and grapes

    Spinach salad w/ tangerines, sliced purple onion, pecan pieces, and raspberry vinagrette dressing

    Tuna salad and crackers

    Chicken salad in pita bread

  • I've been eating low-fat chicken salad sandwhiches lately.

    The Mayo made with Olive Oil is great in chicken salad. Also, Flywife just posted a recipe that is half mayo and half greek yogurt. My mother has been wanting to try greek yogurt, so I think I'm going to make that this week!

    Anywho, low-fat chicken salad on one slice of wheat bread is healthy and filling!

     

  • Grill some veggies over the weekend and keep in the fridge, then get those flat breads, spread hummus, add the grilled veggies and wrap. I got the idea when I tried the veggie wrap at Target, it's really yummy, it's cheap, too they sell for $3 at Target.

    You can spice up your ham/trukey sandwich by adding avacado and sprouts.

  • Here's an easy make-ahead. I just brown some ground turkey and mix that w brown rice, diced tomatoes and some type of veggie (green beans, zucchini, etc). I'll usually make alot and eat it for a few lunches.
