Another random food question...

Sorry... I guess food's on the brain today.  I asked the What's Cooking girls the same question, but given how random it is, I don't know what kinds of responses I'll get.

Situation: My husband went and picked up some celery for me last night.  Specifically, my husband went to Sams Club.  (*sigh,* God bless him.)  I now have three full heads of celery.  (I never knew they were called heads until today...)

I need ideas on what to do with all that celery.  If I snack on it slowly, it'll go bad.  Thoughts?

Re: Another random food question...

  • Potato, Egg, Macaroni, Chicken, etc salads.  Minestrone (sp), chicken, vegetable soups.  My Hoppin' John recipe on FB uses it, just replace quorn with chicken.

  • Shrimp Creole, chicken soup, Asian Stirfry/chow mein etc.

     Ditto the chicken salad and potato salad ideas too.  My mom made a greek potato salad once that she can't find the recipe for now (so sad) that was outstanding.  

     

    I also find that celery holds for quite a while.  If it gets too limp, you can cut it up and throw it in a bowl of water in the fridge and it perks right up.

  • this is kind of a thanksgiving thing but u could make some southern "dressing" or also called stuffing.

    You get an onion and a couple celery stalks and chop it up, add a tbsp. of butter and cook onion and celery in a pan for about 5 min until the onions turn clear. Then, make 2 skillets of cornbread. Once its done, chop the cornbread up and add the celery and onion. Add some salt, pepper, and ground sage to taste, mix it up and pour it into a casserole/glass baking dish. Pour in a half can of chicken broth and bake it on 350 for about an hour, adding the other half of broth halfway through. It is SOOOOO GOOD!! it goes well with chicken, turkey, veggies, whatever! I love dressing...

    My baby girl is a married woman...and now my baby girl HAS a baby girl. Time unfolds in such an amazing way. I've been blessed!

    Nothing wrong with that - I love celery and peanut butter.  (chive cream cheese is yummy too!)  Never tried Pimento cheese though!

    I'm also a lover of celery/peanut butter.... I just don't think I can eat all that celery fast enough just doing that!
