XP: Last Minute Company - Thoughts?

Apparently, we're having company for dinner tonight (which we had thought we'd probably eat out... I'd prefer to stay in anyway.)

We want to base the meal around grilled green pepper & mozzarella chicken sausages.  I was wondering if I shouldn't saute some peppers/onions to serve with the sausages, but any thoughts/critique would be good:

Tossed salad with jalapeno ranch dressing (I'd thought of maybe adding black beans and/or corn to the salad.  Otherwise, pretty standard salad - lettuce, tomato, cucumber.)

Green pepper & mozzarella chicken sausages (buns and possibly peppers/onions to top along with mustards and maybe aioli?)

Proscuitto wrapped, grilled asparagus.

Garlic roasted broccoli

(This is for Mr. Anti-Starch or I'd have just thrown together some potato salad as a side.)

ETA: Now I'm actually considering doing sweet potato fries (cooked a bit in the microwave and then finished off on the grill).

  • Maybe it's just me but that's a lot of food! I think you'd be good with just the green pepper, sausages, and salad.

  • Someone on WC replied that it seems all over the place (which is why I asked because that's what's rattling around in my head! LOL)

    So Mr. Anti-Starch is gonna have to deal with it.  He's getting:
    Chicken sausages w/sauteed peppers & onions & either Red Pepper or regular garlic Aioli

    Sweet Potato fries

    and a veggie (whatever looks decent at the store when I go... broccoli, beans, or zucchini/yellow squash probably.)

    I think we're going to make a grape salad for dessert.

  • I think that sounds much better and a reasonable amount of food :) The sweet potato fries will be good with the sausage on the grill!

  • Yeah I think that second menu you posted is perfect. I tend to over make for company and always end up with tons of leftovers.
