dinner help pls... frozen chicken
what should I do with it? It's too late to throw it in the crock pot. So, what great recipes that are fast and easy do you have up your sleeves to share?! TIA!

My MIL sticks in in aluminum foil packs, covers it in Pace picante, and sticks it in the oven. I don't know for how long, but I'd think even frozen it'd be done in less than an hour and a half or so, and with the amount of liquid in the picante sauce, you can't really over cook it. It doesn't sound like much, but it's really good!!
MIL opens the foil packs when the chicken's done and puts a slice of cheddar cheese on top of each piece of chicken and then puts it back in the oven till the cheese melts.

Yum, that salsa thing sounds really good!
My standbys for chicken are:
Dip in a mixture of 1/2 honey and 1/2 dijon mustard, then roll in chopped pecans and bake at 350 'til the juices run clear.
or
Thaw just enough to slice into strips, then dip in egg and dredge in seasoned flour (I usually do the dipping-and-dredging twice). Fry in peanut oil (medium heat) for homemade chicken strips.
or
Thaw just enough to slice into strips, then dip in egg and dredge in seasoned panko (again, do the dipping-and-dredging twice). Bake at 350 'til they're nice and golden brown. They're crunchier than the chicken strips above and probably a little healthier, since they're baked instead of fried.
