I was hoping to make Bunny's Chocolate Banana Bread today, but I am out of eggs...I do however have 8 egg whites left over from an ice cream project...could I use the egg whites w/ no yolks instead? Would this ruin the consistency of the bread?

You should be OK, but you'll probably have to double-ish the amount of egg white.

How funny that you are making it too...I'm making for the hubby per his request.
The basic rule is two egg whites for every egg.
I have no idea what this bread recipe is, but the name alone is making me salivate.
Well it turned out great. To tell you the truth, I can't really taste the difference from other dessert breads I have made with full egg parts. I'm happy!
