I would like to make homemade bread. I'm thinking of making a bunch of it and freezing individual servings of dough. Do I need a flash freezer for this or do you think my regular freezer will work? I know you can buy frozen dough, but it usually has a bunch of additives would natural ingrediants break down during freezing?

PW explains on this post how to flash freeze her olive bread. I've done that in my regular freezer and it worked well, so I would think it would work fine for homemade bread.
