Whenever I have the day totally off and H has to work I try to make something special since I have the whole day to prepare. So I am making a five cheese stuffed chicken recipe (individual chicken breasts stuffed) with a kalamata and tomato sauce with ceasar salad. I made chocolate covered strawberries for dessert, and I think I am going to open a bottle of champagne!

We're having spaghetti and meatballs tonight, not terribly creative, but we bought fresh pasta from Whole Foods and we are doing freshly made meatballs (we usually do frozen), and making the tomato sauce and grating the cheese ourselves.
Stir-fry veggies (orange & red bell peppers, red onion, mushrooms, snap peas, broccoli) and seitan with a light "General Tsao's" - type sweet/spicy sauce.
I had leftover coconut milk, so I used that to make some haupia (Hawaiian coconut pudding) for dessert.

This is one of my all time fave things to eat and I've been avoiding it like crazy since I'm trying to lose 50 lbs! This post just made me really crave it!
