Go-To Dinners

DH is sick and I have finals this week, so all week dinners are going to be quick and easy.  Figured this would be a chance to share our go-to dinners to see if I could add a few new ones to our list!

  • Grilled Cheese and Tomato Soup

    Hamburgers and Busch's Baked Beans

    Indian Burgers and Sweet Potato fries (Both from TJ's)

    Oven Baked Chicken Fingers with frozen veggies

    Pasta with jarred sauce

    Oven Baked Cod with Frozen Veggies and maybe cornbread

    Butternut Squash Mac and Cheese with Stewed Tomatoes (not as quick, but worth the time investment)

  • spaghetti

    salmon patties

    breakfast for dinner

    grilled cheese & tomato soup

    PeiWei, Showmars, Moe's, McAllisters (pick up for dinner)

    rotisserie chicken from the grocery

    baked potato with something on the grill (chicken, steak, chops)

  • I need more quick and easy.  I love to make chicken pot pie, but it really is pretty labor intensive--I'll usually make it in advance and then bake it when we want to eat it.  What's nice about the pot pie is that while it's baking you can do other things.

    I like baked ziti too, but that too isn't terribly "quick", but it is easy.

    Chicken, Broccoli & Rice Casserole

    1 box Uncle Ben's? Country Inn? Broccoli Rice Au Gratin
    2 cups water, boiling
    1/2 can cream of broccoli condensed soup
    1/4 teaspoon garlic powder
    2 cups frozen broccoli florets
    1 cup Cheddar cheese, shredded


    Preheat oven to 425?F. Combine rice and contents of seasoning packet in 13 x 9-inch baking pan. Add boiling water and cream of broccoli; mix well. Wash hands. Lay chicken breasts on top of rice, sprinkle with garlic powder, cover and bake 30 minutes.2. Add broccoli, cover and bake 4 to 6 minutes or until chicken is done (internal temp 170?F).3. Sprinkle with cheese and bake, uncovered, 5 minutes or until cheese is melted and bubbly.
  • fake chicken parmesean:

    I take a regular shake and bake packet, add italian seasonings to it (whatever I have on hand) and some parm cheese- shake a couple chicken breasts and bake them, top with some jar spaghetti sauce and more cheese and bake for another couple mins- serve over spaghetti and jarred sauce-  easy, tasty and pretty hearty!

  • I second the "fake chicken parmesan". I make this all the time.

    Also, tomato gravy with biscuits and bacon is a good, quick meal - especially if you use Mary B's Frozen Biscuits - the absolute best quick biscuits!

    Another one that I'm in a really big hurry is shrimp and pasta - use pre-cooked, frozen shrimp (thaw by running under cold water for 3-5 minutes) and Knorr Pasta Sides (Alfredo/Broccoli or Garlic Shells are really good for this). Throw the shrimp in when you have about 1 minute left until the pasta is done. This whole meal only takes about 15 minutes! Serve with garlic bread or Bisquick's Garlic Cheddar Biscuits.
