We're grocery shopping tomorrow and we're trying to figure out meals. There are 2 days that we both work past 8pm so dinner those nights would need to be crockpot or one dish meals. So far I've thought of turkey tetrazini and grilling out (steaks, potatoes and a veggie)... any other ideas? What are you eating this week? What sort of snacks are on your list?

We're still mostly surviving off of other people's main dishes, so I just shopped for a bunch of veggies for salads and eggs this week. I've been eating a lot of cheesy omelets in the mornings -- quick and tasty way to load up on protein.
For crockpot meals, have you checked out crockpot365.blogspot.com? Go to "index" for a listing of all recipes. Lots to choose from there.
Snack-wise, I bought my favorite chocolate macadamia nut ice cream and I've been *needing* to eat it straight out of the carton every day. I'll assume that means I'm burning a gajillion calories BFing or something...
I love that blog! I've had several things off there and only one thing that wasn't good. I just picked her book up at the library just to see what was in there, if anything was different than the blog
I'm really wanting turkey tetrazini, it's so tasty and easy! I make it the day before then DH can toss it in the over between his 2 jobs so he can eat then I reheat when I get home.
Care to share the recipe?
Our dinners are 30 minutes or less most nights...tonight I made chicken (with leftovers) and broccoli alfredo with quinoa pasta. Last night it was chicken with sweet potato fries and asparagus.
Snacks:
Fresh fruit (apples, bananas, oranges, pears, etc.)
Raw Almonds
Light Cheese Sticks with Whole Grain Crackers
Graham Crackers and Milk
Plain Yogurt with 1/4 c. flax granola
Corn tortilla chips with a little shredded cheese melted on top
Cereal and milk

Pretty much this recipe below except I add frozen peas because I like them and feel better knowing there's some sort of veggies in there! I also use a little chicken broth and a little white wine or sherry (whatever we have). So I don't use the whole 3c. of chicken broth, it's about that total but with a mix of wine and chicken broth.

How funny. I used to eat flavored yogurt (blended not fruit on the bottom) but switched to plain and have never looked back. I will add fresh fruit sometimes. LOVE greek yogurt! YUM! It's a nice treat when you add in some dried cherries and a little granola. Delish.
Quinoa [pronounced Keen-wa] is super easy to cook...very similar to rice but faster. It's texture and look sort of remind me of couscous. We actually eat pasta made from quinoa more than the actual grain itself. The pasta is awesome and doesn't make us feel bloated, etc. like regular pasta can. The brand we get is called Ancient Harvest...we just get it from the local grocery store in their natural food section...We also like brown rice pasta and occassionally whole wheat pasta.
Quinoa can be eaten like rice and used in recipes that require rice (like stuffing for bell peppers or zucchini, etc.) and even eaten like cereal.

I had been craving for taco salad all week so I made one at home the other day. I made a healthier version :-). We only used romaine lettuce, onions, tomato, salsa, yogurt ranch, black beans, whole kernel corn, cottage cheese. For the meat, i stir fried (no oil, only pam) ground lean turkey and seasoned with paprika, chili pepper, chili powder, lime, black pepper, hot sauce (you can also use taco seasoning since it's easier but i didn't have that so I had to make do with what we have). DH doesn't eat meat so he had broiled mahi-mahi (previously marinated) in his salad. I got most of the ingredients at Costco. I actually call this my Cosco taco salad :-). I didn't put guacamole and sour cream since I don't want the extra calories. It was so quick and easy and yummy too! DH really liked it.
Since I am hungry all the time, i bring tons of snacks at work. I mostly bring fruits (apple, mangoes, pomelo, fried plantain banana). I also bring ready to cook popcorn and stick it in the microwave when i want something salty. Oh, we also have to have wasabi green peas in our pantry all the time :-).
Ooh! We just had taco salad last night...similar ingredients to yours. And we had leftovers so today we made burritos for dinner. I am a fan of cooking enough to use it the next day. For example, we'll cook up enough chicken to have leftovers for the next day and use them in another dish (which lately has been chicken alfredo with quinoa pasta and steamed broccoli or asparagus). I also like turkey sausage or kielbasa sliced and browned...add some sliced apples and spinach into the pan and continue cooking until spinach is wilted and the apples are soft. You can eat this as is or over pasta tossed with a little gorgonzola or feta. Yum!
