I just got to reading your confessions posts and I used to have a lots of trouble painting my own finger nails too.
Ok, so I never paint my finger nails, but did this weekend which I find a little weird bc I just read your posts. Anyway, what I found to work this time was I did one hand fully and let it dry then did the other. I just got some new stuff, so I have a base coat, the color, and a top coat. This helped it dry a lot faster. But I did my left hand first and then let it dry for about 10 minutes. Then I did mt right hand.

This may help to steady your hand: lay your hand to be painted flat on the table, turned towards the hand you'll be painting with. When you're holding the brush, keep one finger from the painting hand firmly pressed on the table (your pinky is probably easiest). Use more of your wrist/arm to move the brush rather than bending your fingers. And rather than dipping for more paint 30 times, try to get enough in one dip, just spread it around. HTH!
Also, this is fantastic and works so much better than a q-tip for cleaning up mistakes:
Or, give up on polish and buff them for shine!
