I have been so unorganized for April, that I have been throwing meals together at the last minute, running around clueless as to what to do for dinner, it was all very traumatic! lol
I finally put a meal plan together, although it doesn't involve any recipes. Things are slowly coming together in my world, so I hope to get back to meal planning after we get back from Vegas on the 14th.
Monday: Breakfast for supper! (one of DH's fav's) Hashbrowns, bacon, toast and eggs;
Tuesday: Steaks and sauted mushrooms with roasted asparagus (hoping to bbq these - keep your fingers crossed for decent weather);
Wednesday: Sheppard's pie;
Thursday: Leftovers;
Friday: Chicken stir fry on white rice.

My menu now runs sunday-thursday so!
Sunday we had : Seafood Pasta with Herb Sauce
Monday: Fajita's
Tuesday: Sausages and bean salad
Wednesday : Country ribs, grilled veggies and garden salad
Thursday : Leftovers/ Fend for yourself;
as I am assuming I will not be up for cooking after my stretch and sweep.. unless baby girl decides to come from now til then; dinners may switch up and in that case there is lots of hamburgers and chilli, and soups and cassroles in the freezer!
This post has inspired me. I am doing weekly menus a full month at a time. April was the first time I did it and it was so much easier. Here is mine for this week:
Monday: Stirfry w/ shanghai noodles
Tuesday: Turkey Broccoli Twists
Wednesday: Hamburger Stroganoff with rice
Thursday: Pork Chops, Perogies, Corn
Friday: Lime marinated BBQ chicken, baked potato, carrots
Saturday: Takeout night
Sunday: Lasagna and garlic toast
Monday: Pork loin roast crusted with dijon and herbs, roast potatoes and carrots (all roasted together in a cast iron pan)
Tues: Left overs
Wed: Jambablya and rice
Thurs: Left overs
Fri: Lasagna, caesar salad, and garlic toast
Sat:?
Sun: ?
Monday: baked fish, tossed salad, steamed beans
Tuesday: Crustless broc & cheese frittata, salad
Wednesday: Chicken sausage, steamed veggies, salad
Thursday: BBQ chicken, grilled veggies, salad
Friday: Leftovers
Saturday: Take out
Sunday: Dinner at IL's for mother's day.
