let's play 'critique my menu'!
We are hosting a potluck for Mother's day - do you think I should add anything to the following? (about 35-40 people coming over)
bolding what I am making:
egg strata w/artichoke hearts & roasted red peppers
croissant french toast w/fresh berries
egg and sausage casserole
brunch potatoes
meat & cheese tray
bagels & cream cheese
green salad
fruit tray/fruit salad
cold crab/shrimp
1 dessert
Do you think that we need anything else? I was thinking maybe a second dessert or another salad (pasta? roasted beet?) but I'm not sure. MH will tell me we have enough, but I am seriously paranoid about not having enough food or enough variety.

Because you are serving 35-40 people I would probably add another kind of salad but probably not pasta. I think a green salad blue cheese or gorgonzola, craisins and pecans would be good with a strawberry or raspberry vinagrette. I'd say 2 different types of Green salad.
Also I would do 2 different kinds of dessert, maybe one with chocolate and one with some kind of fresh fruit.
Otherwise everything sounds delicious! I want some!
I'm late to this, but I wanted to put in my 2 cents.
It sounds like enough food, but it wouldn't hurt to have more desert. One desert doesn't sound like much.
