I have been good about menu planning, but am currently feeling uninspired and we have been eating out a lot. Share your suggestions!
Tuesday: ???? Maybe some sort of meat from the crock pot that is now in the freezer. We're also in freezer clear out mode and that is not helping my lack of inspiration
Wednesday: Out with friends for Cinco de Mayo
Thursday: ????
Friday: Margaritas and HH again
Saturday: With MIL for Mother's Day
Clearly, I need some help. Or another Happy Hour.

Sunday - Angel hair pasta with spicy shrimp (I add frozen broccolli to this during the last 5 minutes. It gives it color and tastes great!)
Monday - Homemade turkey burgers w/ corn on the cob and baked beans
Tuesday - Chicken salsa tacos w/ black beans, yellow rice and mixed veggies
Wednesday - BBQ chicken thighs w/ sauteed zucchini
Thursday - Date night
Friday - Out
Saturday - leftovers

I have also been uninspired, so I'm flying to Atlanta to eat at Kendra's.
Last night we had one of those Buitoni ravioli meals for two.
Tonight is some sort of shrimp and veggies. Maybe stir fry?
Wednesday I'm not sure if we're doing lunch out or dinner out for Cinco. We eat dinner at home then we'll probably make tacos or fajitas.
Thursday maybe catfish with veggies and a baked potato.
Friday dinner out because we're going to a concert.
Saturday and Sunday I'll be out of town so I have no idea what the plan will be.
We don't eat great dinners in the late spring/summer usually, unless it's a weekend. DH has softball Mondays and Wednesdays and also teaches guitar lessons right after work on Thursdays. And I usually work Monday, Wed. and Friday nights. So that leaves Tuesdays, and the weekends to eat an actual dinner together. So my menu isn't that great.
Tuesday: Grilling out turkey burgers, homemade potato salad, and corn on the cob. Yum!
And then, actually DH is going up to his parents for the weekend and I'll be joining them Sunday since I have to work the rest of the weekend, so this is all our menu consists of for now, haha. Maybe it'll be better next week.
I guess I'm not adding much to this post.
Sun- We had pasta w/bolognese from Jaime Oliver's new cookbook. It was really good. I'll post the recipe for that on my blog.
Tue - I'm doing breakfast for dinner because I love breakfast! I'm making homestyle waffles, eggs & bacon.
Wed - I'm hosting a Cinco de Mayo dinner with my spin class girlfriends. I'm making chicken tacos, lime-cilantro rice, black beans, taquitos, and the girls are bringing the margaritas, dessert, chips and salsa.
Sat - I'm making black beans & Margarita cupcakes for a Cinco de Mayo party that we're attending.
Sun - We're hosting Mother's day - it's perfect BBQ weather here high 80s all week long - Taco bar- steak & carnitas, sangria, refried beans and more. I'll probably have make another batch of margarita cupcakes for this, too!
Can you post the recipe for margarita cupcakes again? I can't find and I don't see it in your blog.

I think we will be eating sandwiches this week or something quick. I am going to pick up chicken salad and fresh bread for dinner tonight.
Anyone have any ideas for something quick and easy I can cook up this week besides sandwiches.

I'm super late, but this is what I have.
Monday- Beef Stoganoff and cream spinach
Tuesday- Turkey burgers, sweet potato fries, corn on the cob with chili butter
Wednesday- Breakfast for dinner! Wafles and hash brown cassarole with an over easy egg served on top
Thusday- Shrimp, mango, and avacado torotillas made in the panini press served with cilantro lime rice
Friday- Prosciutto and musshroom stuffed shells with home made breadsticks.

I'm a planner so it works for me, it also helps me limit my grocery spending. I plan my menu on what's on sale from the grocery ads or whatever I haven't finished in the fridge - I hate wasting food.
I buy lots of produce and try to go through it for the week for us. I hate walking around the store and not knowing what to buy. I also keep my pantry fully stocked with items if we have a last minute guest or dinner party happening at our house. I always have lots of wine waiting for you!
I also account for nights that I don't want to cook so I'm not spending ALL my time in the kitchen.
