I have a mushroom dilemma. I bought a package of sliced crimini mushrooms and totally spaced out the other night and didn't put them in the dish I was making. Now I want to use them before they go bad. I was thinking of doing some sort of duxelle with them, folding it into some ricotta and stuffing that into the jumbo shells I have in the pantry. Do you think this plan will work? I've googled a few things but I'm mostly going on my own ideas here. Thoughts?

Sure, I would probably saute the mushrooms with some garlic, onions and maybe some spinach with a little butter or olive oil. Mix that with the ricotta and then deglaze your pan with a little white wine, make a roux or add some heavy cream to make a sauce to pour over the top of the shells.
If I liked mushrooms, I think it would be great
but I'm pretty sure DH would love it.
