My ILs are coming over for Mother's Day and I need dessert help. My MIL is always dieting and my FIL is overweight and has diabetes. FIL eats normal desserts when we go over there, but I don't think he is supposed to (health issues are a gauche topic in DHs family so it is never addressed- I'm not even supposed to know about the dibetes).
So with that said, I am looking for a low in added sugar dessert that isn't fruit salad. Know of any?

What a coincidence, I've been trying to think of the same sort of dessert options for my inlaws visit this weekend too!
I think I'm going to go with sugar-free ice cream with some sort of fruit topping. Nothing fancy, but I think it will do.
As you know, my coworkers are very health conscious and think chocolate is the devil. Two of the things they brought in I did like (but not the smug "My way is right" looks I got from them). Anyways, one was a fruit salad but it was mixed in with pudding so you could get a sugarless pudding or something. They also did a tarte with what I think to be a cool whip/cream cheese mixture on top of a crust and then fruit on top of the mixture. Again, you could substitute with the sugarless pudding or maybe there is a light coolwhip you could use?

You are all leaning in the fruit direction which I think is right. Usually I love strawberry shortcake but strawberries out-of-season are always so bland.
To make it more difficult, I am lactose intolerant. Usually I can make lactose free versions of dairy filled desserts w/ a few substitutions, but there are limits.
I wonder if I could make a sorbet or sherbert with splenda... do you have to have an ice cream machine for those? Anyone familiar w/ splenda? I've never used it before.

We are approaching strawberry season. I have picked up a couple of pints of strawberries recently that have been quite tasty.
I think you can buy sorbet and sherbet at the grocery store and probably even made with splenda. I have no idea how to make it from scratch.
I have used splenda and think it tastes okay. I think it would be especially good in a fruit based dish because you have the natural fruit sweetness going on. You could also try a natural sweetener like agave nectar or stevia.
Oh yea I forgot I have agave nectar in my pantry! Thanks.

I've made this before for my dad who is diabetic.
Sugar Free Angel Food Cake- cut into cubes
1 lg or 2 small pkg of Sugar Free Vanilla Pudding made with Skim Milk
1 tub of Sugar Free Cool Whip
2 cans of Peachis in light syrup- diced.
Mix the Cool whip and pudding together.
Layer cubes of cake, pudding mixture and then peaches in a pretty glass bowl, repeat ending with peaches. This is a light and refreshing low sugar/low cal dessert that still tastes good!
