We've been not going to the store much and have been going through the freezer . . . can you tell I am getting a little tired of my options?

  • Chicken. Lots of chicken. Oh and dirty rice.

We had a HUGE bbq for mother's day at my brother in laws parents house. They started loading stuff and cars and i wasn't really paying attention.

I come home and find THREE whole bbq'd chickens. Three. WTF am I going to do with three whole chickens! Not to mention half of a sliced WHOLE rib eye and an ENTIRE pan of dirty rice. I could feed an army.

    So my plan is:

Chicken and Sausage Gumbo - 1 chicken

    Chicken Salad - Half Chicken

    Chicken Enchiladas- Half Chicken

Not sure what the heck to do with the last. Might be forced to bring it to work to feed the guys in the office.

Oh and we had rib eyes and dirty rice for dinner.

Ohh I forgot the best part. An entire large plastic container of Green Goddess Salad dressing. Home made, yes, but WTF. It's like a half gallon.

What about tearing the last one off the bone for shredded chicken tacos. You can freeze the leftovers. That's a lot of food for 2 people.
