We've transitioned to *almost* exclusively using cloth, instead of bleachy, wasteful paper. BUT, I will confess that we still use it to drain fat from fried foods like bacon and potato chips, and to absorb moisture from tofu. When it comes to this stuff, I just can't seem to let it go!
Does anyone else have a paper towel habit they just can't seem to drop?

Try tea towels for the tofu (or, a tea towel around the tofu and then a more absorbent towel around that).
As far as greasy stuff goes, you could use newspaper or a layer of paper towel, then newspaper.

We use them for grease, too. Grease ruins the absorabancy of our cloths, so that isn't a good choice.If you are buying recycled, non-bleached PTs and using them sparingly, that is just fine in my book. For the tofu, I would use cloth. I use a large tea towel for getting the moisture out of cut veggies for crisp-cooking, making my pumpkin puree thicker, etc.
P.S. Some people use newspaper for grease, but I just can't bring myself to do it.
We also still use paper towels for grease. I need to start buying the recycled ones, but they don't come in select-a-size so I end up using a whole square when all I needed was the third of a square I like from the store brand.
For tofu, we use the Tofu Xpress. I know it's a bit pricey but this is the.best.kitchen.gadget.ever! You set the tofu in it and lock the top, we usually leave it in the fridge overnight. You'll have the firmest, dryest tofu you've ever eaten. It's meaty and delicious! It comes with a marinating lid, so we usually press it overnight, add the marinade in the morning, and presto you have perfect tofu for dinner. I PPH this thing.
ETA: We also use paper towels for pet messes. I just can't bring myself to use a cloth to clean up cat pee then use the same cloth after it's been washed for drying dishes
Um- yeah. I'm totally with you on that! We have kitchen exclusive towels so there's no crossover!!
