I'm hoping someone around here can help me out. I'm trying (or starting to try) to make an honest effort to eat better and I'm having a really tough time. When I keep a food journal, it makes me painfully aware that all I eat - all day long - is carbs of some sort. The hubster has even begun to point this stuff out. I just don't know what to eat, though! I'm a super picky person, so I don't eat that much of a variety to begin with.
Anywho - enough with the preface... on to my question. I'm working on veggies. I don't eat or like many of them. But I do love corn. I'm wondering if corn is okay to eat a decent amount of time? I've heard that it's really not that beneficial, health-wise. Is this true? Thoughts?

I'm not sure about corn, but I enjoy "mashed califlower" like mashed potatoes they are yummy :-)

i think there are better veggies out there for you to eat, but corn has protein and fiber in it, and both are good for you. it also has water in it, which combined with the fiber can help you feel full. it's a great source of vitamin a. but keep in mind, corn also has a calorie content and carbs.
are there any other veggies you do like? have you tried different things or do you just think you won't like them? zucchini and squash are really good, and don't have much flavor - so they take on whatever you marinate them with...that might be a good option for you.

We add grilled chicken breast to this when we make it for dinner. Seriously - you won't believe how good it is!
Do you like carrots? I actually have a problem with eating raw veggies, where I'll eat any vegetable when it's cooked. I'm trying to change that so I can eat veggies as a snack at work. I love raw carrots, so I mix them in with some other veggies I may not be as fond of. Having the carrots I love helps me eat the other veggies without a fight. Also, if you like a dipper then you should try hummus. There's so many different flavors, and in small amounts it's not bad for you. I like dippers, but I think fat free or low cal dressings taste like poo.
