Beans!

Since they're cheap and figure-friendly, I'm looking for some good bean recipes.

I already do a lot of bean soups, so I'm hoping for some other good main dish suggestions.  Vegetarian or not...

  • I don't have a good recipe but I like falafels.  I'm afraid of deep frying so I usually pan-fry or bake.

    I haven't tried making them yet, but I'd like to try lentil burgers, black bean burgers, etc.  I've seen recipes where they have ground walnuts, rice and other stuff in them.

    How about daal, chana masala, or mjarda?  Again, no recipe but it should be easy to find one online.

    I also make a salad of chopped carrots, celery, with chickpeas and a balsamic vinaigrette.  That will keep for at least 2-3 days, and just before eating, I'll add chopped mushrooms, pecans, etc.

  • these aren't exactly recipes, but they're the most common ways we use beans (and bean-like foods) -

    we love lentils and bacon - just cook together for a long time Smile.  or split peas - i think we put bacon in that too..Embarrassed  okay, maybe not exactly figure friendly, but oh-so-tasty!  i also use beans a lot in chili.   or just heat up frozen corn and black beans (from a can) together - super simple, quick, and yummy too. 

    i want to cook more beans too - will have to keep an eye on this thread!

  • Welcome to my world.  Since MH is veggie but I'm a protien hog, I had to get creative with beans.   Here are links to some of my faves from cookinglight.com:

     Chickpea and Corn patties - these are delish but a little time intensive.  If you had time on the weekend, make a bunch of patties and freeze them

     Split pea with rosemary - I like this one b/c there's a tomato paste/soy sauce (don't be scared!) deal that give this a really robust flavor, you barely miss the ham!  This one is super easy too.

    This is a Marth recipie: Cuban black beans with rice.  It's got a great lime flavor and veggies too!

    cookinglight.com also has a bunch of great lentil soup recipies.  For anything that calls for bacon, I use fake (soy) bacon.  Pretty good flavor when needed.  I typically use this website to find new recipies.  Good luck and let us know if you find anything really tasty!

     

  • Try out this Chicken and Black Bean Burrito recipe.  I love love love it! 

    We ate half the dish for dinner one night and froze the other half, it cooked up perfectly. 

  • Saw these recipes on The Nest's recipe finder:

    Serves: 8 generous servings 

    Ingredients:

    4 cups dry black beans
    2 tablespoons cumin seeds
    2 tablespoons Beaujolais Blend Herbs* or dried oregano
    2 cups finely chopped yellow onions
    1 1/2 cups finely chopped green bell peppers
    1 teaspoon minced garlic
    1/2 cup olive oil
    1 teaspoon cayenne pepper
    1 1/2 tablespoons paprika
    1 teaspoon salt
    3 cups canned crushed whole tomatoes
    1/3 cup finely chopped jalapeno chiles
    1/2 pound Monterey Jack or Cheddar cheese, grated
    Sour cream
    1/2 cup finely chopped green onions
    8 sprigs and / or 1/4 cup chopped cilantro

    *Beaujolais Blend Herbs are available from Fuller?s Fine Herbs (www.fullersfineherbs.com)

    Directions:

    Sort through the beans; discard the funky ones and the small pebbles. (Our prep cook didn?t like doing this either.) Rinse well. Place in a large pot and cover with water to several inches over the beans, cover, and bring to a boil.

    Reduce the heat and cook for about 1 3/4 hours, or until tender. Water should always cover the beans, so add more if the beans start to peek through. When the beans are cooked, strain, reserving 1 cup of the cooking water. Add reserved cooking water back to the beans.

    Toast the cumin seeds and Beaujolais Blend Herbs in a small pan at 325?F for about 10 minutes, until the fragrance is toasty.

    Saut? the onions, green peppers, and garlic in the oil with the toasted cumin seeds and herbs, cayenne pepper, paprika, and salt for 10 minutes, or until the onions are soft. Add the tomatoes and chiles. Add this mixture to the beans and stir well.

    To serve, place about 1/4 cup grated cheese in a warmed bowl, add a generous cup of beans, and dollop with a spoonful of sour cream. Sprinkle with 1 tablespoon green onions and cilantro.

  • you could do homemade turkey chili with beans.  i like to throw pinto or black beans in a crock pot with carrots, celery, tomatoes and a hamhock for flavoring. i know you said you already lots of bean soups but that's one of my faves. 

    i'm curious...did you ever try the hot water?

    That sounds yum.  I've never bought a hamhock before.  Can I just get that at the regular grocery?

    And by hot water, do you mean the post-pregnancy get-skinny trick?

    yeah the skinny trick.  maybe i should start guzzling hot water...lol. 

    you can buy hamhocks at the grocery store in the meat dept.  safeway carries them by the pork products.  they are smoked so they give a good smoked pork flavor to the beans.  i don't eat it, just use it for flavoring.  they are super cheap too...like $2/ea.

  • ooh, great tip.  i consider chili separate from soup, so i'll give that one a try!

    i think the hot water helped, but mostly it was the belly band.  supposedly the heat helps with healing and contraction.  who knows.  all my old clothes fit now, but i do have a little bump that wasn't there before.  so i'm not totally back in shape, but i'm happy.  i couldn't drink the hot water exclusively for too long, though.  it's just too hot here!

  • This is a little different, but I LOVE this vegetarian bean curry recipe! I make it in the slow cooker.
  • I have a great recipe for split pea, lentil soup with ham hocks. It's low(er) fat too! If you haven't already, take a look at the Moosewood cookbooks - they're a vegetarian restaurant in NY state. They have lots of great bean ideas!
  • pineapple black bean enchiladas in my blog.... sometimes i add chicken but even w/o the chicken they are really good :) there is a search function on the left hand side of my blog
