OMG so good...

Tried a new recipe last night.  It's so simple, and many of you have probably tried it before, but it was a first time for me!  Loved them so much, I have to share!

Baked Sweet Potato Sticks
Based on (http://allrecipes.com/Recipe/Baked-Sweet-Potato-Sticks/Detail.aspx)

1 tablespoon olive oil
1/2 teaspoon paprika
8 sweet potatoes, peeled & sliced very thinly lengthwise into quarters

  1. Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spay or vegetable oil.
  2. In a large bowl, mix oil and paprika. Add potato sticks, and stir by hand to coat. Place on the prepared baking sheet.
  3. Bake 40 minutes in the preheated oven. Best eaten at room temperature.
My notes:

1) Slice the sweet potato as thin as you can manage. Don't do wedges. I quartered the potato, and then sliced each quarter thin.

2) I only used one potato for the first time. It was gone by the end of the night!

3) The thinner you slice the potatoes, the shorter your cooking time will be. I went the whole 40 minutes and some of my potatoes were a bit blackened. HOWEVER, I found the lightly charred flavor to be excellent. Don't discard those until you try them.

4) I did paprika and salt. Some of the other reviewers did garlic, onion, powder, cinnamon/sugar... whatever their tastes were.

5) I would agree that they're even better at room temperature than they are warm.
