Wow - I finally cooked something worth posting!
As all of my recipes, it's pretty much off the cuff, so bear with me
Pasta with Roasted Red Pepper, Vidalia Onion, Chicken and Pesto
Pesto:
2 tablespoons coarsely chopped walnuts or pine nuts2 garlic cloves, peeled5 tablespoons extra-virgin olive oil4 cups basil leaves (about 4 ounces)1/2 cup (2 ounces) grated fresh Parmesan cheese1/4 teaspoon saltDrop nuts and garlic through food chute with food processor on; process until minced. Add oil; pulse 3 times. Add basil, cheese, and salt; process until finely minced, scraping sides of bowl once.
Chicken:
Prepare 2 boneless skinless chicken breasts by rubbing them with minced garlic (approximately 1 clove per breast), salt, and pepper. Grill approximately 8 minutes on each side, until cooked through. After the chicken is cool enough to handle, slice against the grain into thin slices.
Peppers and Onions:
Slice one red bell pepper and one vidalia onion into thin 'crescent' slices. pour 1 tsp of extra virgin olive oil into a ziplock, add veggies, and toss until coated. Place in grill basket on the grill and turn occasionally until softened but still crisp.
Prepare pasta according to directions. I used gluten free brown rice pasta spirals. Once pasta is drained, add pesto and stir to coat.
Spoon 1/2 cup of pasta into each bowl, top with grilled veggies and sliced chicken. Add freshly grated parmesan cheese and pine nuts to your liking.

haha I was too busy all year, so now that I'm off for the summer, I've been cooking my little heart out!
