Something new in the kitchen
I am making a big dinner this weekend for DH just for fun and as much as I love to cook - I've never made mashed potatoes from scratch before. I got a recipe off allrecipes.com so I'll just follow that, but I was wondering if anyone has any good tips/advice?

Do you have a potato masher? I like it better than the mixer, I tend to overwhip that way. All it takes is butter, milk, salt and pepper to make good ones. Add the milk sparingly, it's easy to go overboard.
DH likes it when I mix in cheese, bacon and scallions, but it's a once in a while treat.

Peel and cut the potatoes (slices or coarsely cubed) then boil them until they are tender and use your prefered method of mashing. Reserve a small amount of the boiled water for added nutrition (most of the vitamins boil out) and this is a healthier way to thin down the potatoes vs. using milk. Once the potatoes are mashed a bit, add ingredients that need to melt first - butter and/or cream cheese (optional but makes it really creamy and delicious!). Sometimes I like to add a bit of ranch dressing for something a bit different...it's my secret ingredient
. Add in your liquid (reserved potato water and/or milk) until you reach your desired consistency. Finish with seasoning - salt and pepper at a minimum; garlic powder, onion powder, Mrs. Dash Original Seasoning Blend if desired. Sour cream and chives, bacon, cheddar cheese are also great additions to consider! I never measure and just add all ingredients to taste so have fun with it! It's really hard to mess up mashed potatoes!
A note about mashing: for more coarse (you KNOW they're homemade!) mashed potatoes use a potato masher. I prefer the one with a grid vs. the one that is just kind of wavy. It seems to work faster to break downt he potatees. For a more smooth potato, use a hand held mixer.
