DH's Grandpa is very old and very stubborn. He refuses to eat pre-made store bought freezer meals. But, he is also getting too old to cook. But, he will eat what I (or other family members) make ahead and freeze for him. He just pulls them out and tosses them in the microwave. (These are slightly different than the freeze ahead because I pre-cook them)
As a result I have become slightly obsessed with freeze ahead meals. I can't wait until DH and I move and I can start doing them for us. There are entire blogs/websites/cookbooks dedicated to this and I never knew about it.
Do you guys do any freeze ahead meals?
Any suggestions for great recipe's I have to try?
Suggestions for things I can cook and freeze in serving size containers for DH's Grandpa?

for baby prep we did chili, chicken enchiladas, sausage quiche, chicken pot pies, soups, pizza, and enchiladas...all came out super tasty on reheating, and were (are) lifesavers when we got home.
when i start cooking again i'm going to try and do big batches so i can tuck some in the freezer each time.
