Healthy Memorial Day Sides
We are going to 2 cookouts on Memorial Day and are bring a side to each. I'm trying very hard to eat healthy and want to bring some that is not only healthy but deicious. I'm not coming up with much. Any ideas??

Hmm.. I always have Caprese Salad as my go-to on that one. Pretty easy - leaf of basil on the bottom, some good fresh mozzerella in the middle, and a fresh tomato slice on the top - drizzle with olive oil and salt/pepper, and that is all!
I have a friend who tries to do it more 'finger food' friendly, and makes them into smaller bits held together by toothpicks.
I just remembered we have 3 boxes (about 4 cups- not sure if they are a pint/quart) of blueberries at home. So anything to use those up would be great!
Do you think this pie would be any good? My concern is that it seems a lot of people ended up with a runny pie.
If you want to use the blueberries, you can do a simple white cake with blueberries. If you want to be "healthier," you can do an angel food cake.
Throw your blueberries in a skillet with some butter (less than tablespoon), toss in some sugar and a touch of nutmeg. Warm this up over low heat and some of the blueberries will cook down, making it great to spoon over a slice of cake. Light, not too sweet and very summery.
I love blueberries tossed in my salads, but I like interesting things in my salads. Sliced almonds go nicely with blueberries.
I also like the idea of blueberry in a white cake. YUM-O.

while this would be yummy, I still would not consider this healthy.
you could do homemade hummus and pita chips/carrots/celery.

That doesn't help with the blueberries, but it does look yummy!
This is one of my favorite salads, so I think you got it from me. But this group of neighbors has already had it, but I was thinking of maybe bringing it again since it is always a winner.
