Asparagus recipes

Hi ladies! I hope everyone had a great holiday weekend. I once again need to ask for help while trying to plan out our meals so I can go to the grocery store (gag! I hate planning meals). I was thinking about making grilled asparagus as a side one night but I am not sure of the best way to fix it. I have never made it but we both like it so I thought it would be a good change of pace. I usually just brush oil on the veggies then season with salt and pepper and slap on the grill but I wasn't sure if asparagus would taste good like that. Any thoughts?

What are your meal plans for the week ahead...I could use a little inspiration.

  • I LOVE asparagus just the way you said.  I ususally pour olive oil over it and add salt and pepper, sometimes garlic salt and pepper for a change of pace.  Toss them in a bowl until they're evenly coated.  They are done just about the time the make "pop" sounds from the grill grates. 

    My sister also made them under the broiler at my house once.  Top them with some shredded Parmesan cheese and they're done when the cheese melts.  Meanwhile make a reduction of balsamic vinegar and honey on the stovetop and drizzle that over the finished asparagus.  So good.

    I have to get my Dad's recipe but he par-boiled some this weekend and made a vinaigrette dressing to go with that had lemon zest and some green onions and other stuff.  That one is served cold and was really good. 

     

    Not so great about meal plans this week.  DH is out of town so I'm sure I'll eat whatever is leftover in the fridge.  I'm not good at cooking for one anymore!

  • I prepare asparagus just the way you described it (olive oil, S & P and on the grill).  If you want to add some layers of favor,  you could always prepare a hollandaise sauce and pour it over the cooked asparagus.  I cheat and prepare the sauce with a packet... it's much easier.  Here's the one I use:

  • We make it just the way you said, but we add garlic and we squeeze lemon juice over them when it's done.  If you're not grilling other items, we sometimes cook them in the oven or even in the microwave in one of those square clear glass casserole dishes.  It's super easy, but if you're grilling anyway, that works too. :)

  • Oh!  Also... I was watching "Grill It" on Food Network yesterday and they were grilling potatoes.  They cut the ends off to make it stand straight up, they peeled them, cut a little hole out of the top with a melon baller, wrapped the outside of the potato with bacon and put it on the grill, halfway through, filled the hole with cheese and a couple of asparagus stalks.  Tented it with foil and cooked the potato through.  It looked amazing!

  • LOVE asparagus!  Usually steam or grill it with garlic then add lemon. Now I'm hungry....
  • I toss them in olive oil, salt, pepper &  garlic salt. I then make bunddles with 3-4 pieces of asparagas with procuitto (however you spell it). THen I sprinkle with parmesan cheese and bake in the oven for a little while. I think 8 mins max, but I just keep my eye on them.
