I guess that applies to everyone, huh?
So, I'm hosting a weekend up at my cottage for my high school friends this summer. We had them up last summer for the first time, and it was great. We did a potluck and ended up with ridiculous amounts of excess food. So, I think this time, I'm going to ask them to bring the booze and Phil and I will do the food.
Which means I need to come up with a great summer
menu for two dinners. The first night we're going to do burgers, but I'd
really like to do something thematic for the second night. I'm thinking
something either Mediterranean or Hawaiian (it's our anniversary two
days before they'll come up and I thought it might be fun to revisit
tasty meals we shared together on the island), and I'd like to make as
much use of the grill as possible.

Here's a breakfast favorite I make for guests:
Eclaire?s Egg and Chili Wanna Be Quiche
10 eggs
? cup flour
? cup melted butter
? tsp salt
? tsp baking powder
1 pint (16 oz) cottage cheese, I like using small curd
2 small cans diced Ortega chili?s
1 med can sliced olives
? cup diced onions
1 pound shredded jack cheese
Beat eggs until light and lemon colored. Add flour, baking powder, salt and cheeses stir until thoroughly mixed. Stir in chilis, olives, onion. Pour into a 9x13 baking dish, sprayed with non stick baking spray. Bake at 350 for 35 min or until top is brown. You can even over cook it and it will be perfect, the browning is delish!
I like serving with warmed flour tortillas. Cholula or your favorite salsa goes really well with it.
If you grill some extra veggies the night before for the burgers (onions, peppers, mushrooms, zucchini, you get the idea), you can chop them up and put them in a breakfast casserole the next morning (if everyone eats dairy and eggs) and top with goat cheese. I think these can be done in those large rectangular, pyrex-type things. I don't have a specific recipe though... You could also cook a few potatoes on the grill the night before as well for hash browns the next morning.
If everyone eats fish, you could cook it on the grill in some foil, and top with some kind of mango/pineapple salsa.
You could do a plate lunch theme and have some kind of grilled meat (or kahlua pork as pp suggested), with macaroni/potato salad. Those could be made ahead of time, right?
