Squash?? Lots of Squash!

Hey ladies!

 So I have a question. I ride horses for a local farmer and he recently gave DH and I a HUGE bag of squash because he had too much and thought we'd like some (He's a super sweet old man) Anyways. . DH and I have never been huge squash eaters, but figured this would be the chance to try different recipes with them. 

So what are your favorite squash recipes? How do you cook them?

Would you like some? Lol I'm serious. . we have about 20 that are at least 6inchs long so I'm assuming thats a decent size squash (and they're yellow). . it's pretty obvious I haven't ventured into the squash veggie area Ha!

  • DH and I like to slice (length-wise) and grill them (we usually place a piece of foil sprayed with olive oil on the grill so the squash doesn't fall through the cracks. Another way is to cut them in the pieces (fairly small), saute them in a little olive oil and top with parmesan cheese.

    LOL so did I!  But who likes Squeeshy Squash??!  :-)

     I sautee mine as well with olive oil and dill.  You can also try it with Greek Seasoning - yummmmm.  And being from the South we fry 'em as well.  Slice them, dip them in milk, flour seasoned with salt & pepper and then fry in hot grease until brown.  YUMMMMM

    Squeshia does kinda roll off your tounge doesnt it??

    You can freeze them.  Slice them - dont wash them and put in a freezer bag.  I have also seen ppl pickle them and put in Mason jars, but I have never tried them like that so I dont know how they taste?  If lived near you I would totally get some.

  • You should definitely try this recipe.  It is one of our favorites and we usually can only make it a few times a year since it requires so many squash.  But sounds like you are in luck!
  • What time are you going to be around State?  I would love some squash!
  • We like to saute them in a pan with a little bit of olive oil, onions, and yellow/red peppers until tender. Then, add a can of crushed tomatoes and some italian spice and cook 5 minutes, makes a great meal if served with pasta or a nice side.

    Otherwise, I'll saute them in a little bit of veg. oil and season with season all.

    Hey! I was just about to page you and let you know that we cancelled for tonight due to the storms. My front tires are shitastic -slide into an intersection yesterdau- so I'm staying out of the water right now. 

    Want me to let you know what time I'm heading up that way tomorrow when I find out?
