More NER: Fun cocktail recipes

I'm throwing a bachelorette party on Friday and was thinking of making a fun cocktail... any ideas or suggestions? Mr P, you're always good with the cocktail ideas.....

And, if anyone has any delicious appetizer recipes, I'd appreciate those as well. I'm such a horrible party planner and am hating every minute of this.

Re: More NER: Fun cocktail recipes

  • Macaroni and cheese bites! Make macaroni and cheese (homemade, NOT box), spread in a thin layer on a cookie sheet, and refrigerate. Cut into small pieces (triangles work well). If you can, freeze the individual pieces for a few minutes before making them. Heat oil in pan. Dip each piece in egg, flour, egg, breadcrumb. Fry. Revel in the delicious fried cheese.

Cheese-filled risotto balls! Make a recipe of risotto (either parmesan or mushroom works well). Refrigerate overnight. Cut mozzarella into dice. Roll risotto into balls and stuff with a few pieces of cheese. Heat oil. Roll bals in egg, flour, egg, breadcrumb. Fry. Revel in the delicious fried cheese.

Rachael Ray has a good recipe on foodnetwork.com for "Italian nachos" - basically pitas topped with antipasti ingredients (roasted red peppers, mushrooms, artichokes), topped with cheese and baked.

Chips and guac are always good.

I have a hot artichoke dip recipe that I can't remember right now - it involves artichokes, mayo, and parmesan. It smells completely disgusting cold, but it's awesome hot.

Chicken salad puffs - you can make puff pastry (like for eclairs/cream puffs) or just buy those frozen pastry shells. Fill with chicken salad.

Eggplant dip and hummus. I don't know any recipes off the top of my head, but I love them.

Tortilla pinwheels - 8 ounces cream cheese (softened), 8 ouches (I think) sour cream, 8 ounes shredded cheddar, chopped black olives, small amount chopped onion, chopped green chiles (for mild, ie bland) or chopped jalapenos (for hot), seasoned salt; spread on large tortillas, roll up, chill, and slice.

    I'm starving now.

My two favorite two cocktails are margaritas on the rocks and cosmos. A champagne float in the cosmo would make it fancier.

They are SO good. We had them at a restaurant here in MKE (before they appeared at TGI Fridays!) and I decided to try them at home. Mine are better because I don't use that nastyass American "cheese." I only make my mac with actual cheese.

  • How complicated do you want the drinks to be? Bellinis are easy and yummy. Or just do champagne with some Chambord (raspberry liquor).

good. and dangerous. lol, i got so sidetracked by this post, i forgot to respond to the OP.

i'm partial to mojitos. they're super easy and a fun party drink. and i'd probably cheat on the appetizers and get some prepared goodness from whole foods. i'm lazy like that. ;)

  • Thank you thank you thank you, my helpful online friends. The mac n cheese bites sound insanely delicious and I am definitely making those.  And probably the white pizza, too.

Or just do champagne with some Chambord (raspberry liquor).

This sounds good, gtown, and bachelorette-y since it would be pink.

  • Since I don't know the specific drinking demographics, I will base my recommendations on the statistics I have collected over the years.  Make a large pitcher of a cocktail.  For fun I'd recommend:

Tokyo Tea (same as a long island but swap triple sec for midori or melon liqueur and 7up instead of coke)

Modified Blue Hawaii - 1/2 shot (.75 oz) each light run, vodka, blue curacao, 3 oz pinapple juice, splash (1-1.5 oz) 7up

Mr. P's Mai Tai - 1.5 oz light rum, 0.5 oz Overproof (151) rum, 2 oz Orange Juice, 0.75 oz Grenadine, splash dark rum (recommend Trader Vics or Myers)

Moosemilk - 1 oz white rum 1 oz dark rum 1 oz Kahlua coffee liqueur 2 scoops vanilla ice cream 2 fresh strawberries - blend and serve
