recipe if anyone is interested!

its for chicken francais. and omg was it good! i made it last night :)  its fro my cooking light cookbook so its healthy and low fat.

3/4 cup egg substitute

1/4 cup grated fresh parmesan cheese

1/4 cup chopped fresh parsley

1/4 cup dry white wine

2 tbsp fresh lemon juice

1/4 tsp salt

1/8 tsp hot pepper sauce

3 garlic cloves, minced

8 skinless boneless chicken breast halves ( i used 5 thin sliced breast cutlets)

1/4 cup all purpose flour

sauce:

2 tbsp butter

additional 1/4 cup dry white wine

additional 3 tbsp fresh lemon juice

combine firs 8 ingredients in a dish. dredge chicken in flour then dip in egg substitute mixture. heat 1/2 tsps olive oil in a large non stick skillet that has been coated with cooking spray over medium heat. cook chicken 4 minutes on each side or until done. remove from pan and keep warm.

sauce: melt butter in pan, add 1/4 cup wine and 3 tbsp lemon juice. briong to a boil, cook 10 seconds. serve immediately over chicken.
