Share Your Favorite Summer Recipe

Kaesha's summer menu help post got me craving one of my all time favorite pasta salad's and I would love to share the recipe with all of you!  Do you have a summertime favorite?  Dessert, salad, marinade, appetizer, anything you enjoy making and serving during the summer...  I'll start with:

Eclaire?s Orzo Pasta Salad

1 box orzo pasta

1 sm red onion diced

1 sm jar sundried tomatoes packed in oil, julienne cut ? lightly drain before adding to salad

1 jar artichoke hearts, drained and sliced

1 pkg tomato/basil feta cheese (sometimes called Mediterranean)

1 pkg baby spinach leaves, keep whole

12 fresh basil leaves, cut into small pieces

Girard?s Light Champagne dressing.

Optional ? diced chicken breast or shredded chicken

 

Cook orzo,drain.  Rinse orzo, let soak for 30 mins, rinse and drain again.  Fluff orzo.  Put orzo in Ziploc bag, add 1 cup dressing and refrigerate for a couple hours or overnight.  Put pasta in large bowl, add everything else just before serving, fold all together and add more dressing if you like.

  • Summer salads made me think of my Nana's orange and onion salad. It sounds bizarre but is actually quite tasty! You segment an orange, then thinly (VERY thinly) slice some white onion. Toss on a little Italian dressing and voila! Like I said, it sounds bizarre - and actually rather gross, I'll admit - but it really does taste surprisingly fresh and nice.
  • This is truly the BEST lemonade ever!  Don't shortcut and just mix the sugar and water together instead of making the simple sugar (by boiling the sugar and water together).  It is absolutely delicious and refreshing!

  • 1 Hamilton Beach Commercial Blender

    1/2 full of frozen strawberries

    1/2 container Hagen Dazs Mango

    2-5 oz. Bacardi or good vodka (blitz vs flavor factor)

    Odwall Mango Tango (fill until blender is 2/3 full with liquid)

    1/2 cup whole organic milk (we like Horizon... if you don't have it, any milk or vanilla ice cream will do)

    Fire up the blender on high for 1 minute. Stir. On. Off. Stir. High for another minute. Low while you pull out the glasses and straws. Pour and garnish.

    i make this corn and tomato salad *all* the time in the summer.  it's super easy and yummy.


    3 tablespoons white wine vinegar
    pinch of kosher salt
    Freshly ground black pepper
    1/4 cup extra-virgin olive oil
    6 ears fresh corn, husked (about 4 cups corn kernels) - I've always used frozen super sweet corn - one bag, defrosted, and just put in tomatoes and mozz until it looks about right, hah
    2 cups red or orange grape or cherry tomatoes
    some scallions (white and green)
    8 ounces fresh mozzarella, cut into small cubes
    1 1/2 cups fresh basil leaves

    Whisk the vinegar, salt, and pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.

    Shear off the corn kernels with a sharp knife over a bowl. Toss in
    the tomatoes, scallions, and mozzarella. Pour the vinaigrette over the salad and toss to coat. Cover and let set for 15 minutes or up to 2 hours. Before serving tear the basil (or cut in a chiffonade) over the salad and stir.

  • I have a really simple marinade for veggies on the grill.  I basically slice up peppers and zucchini, drizzle them with soy, balsamic vinegar, and sesame oil, marinade for a few hours, and then grill until they get marks on them.

    I also make a noodle salad using rice noodles (the skinny kind) or vermicelli. 

    Cook noodles according to package.  Drain, and toss with a little sesame oil to prevent them from clumping.

    Thinly julienne peppers, cucumbers, and carrots and toss with noodles so that they are well-mixed.

    Make a dressing with 1/4 cup of soy, juice of 1 large lemon, 1 tbsp of sesame oil.  If you like it spicy, you can add dried chili flakes and 1 tsp or so of chili oil.  I usually leave the dressing for ppl to spoon on themselves b/c the noodles and veggies get mushy very quickly if they sit in the dressing for a while.

    *to change it up a bit, you can sub the lemon for 2 limes and add some fish sauce and sub crushed, roasted peanuts for the sesame seeds.  Extra garnish could be mint and cilantro leaves.

    **you could also add shredded meat or strips of tofu to make it more meal-esque.

    ***for ginger fanatics, you can add 1 tbsp of grated ginger to the dressing.

  • I'll try and find links once I'm off my blackberry, but Martha Stewart's Vermont Turkey Burgers and Fine Cooking's Corn and Zucchini Saute with mint and cilantro are two of my all time faves!
  • I love to just slice up summer fruit (strawberries, peaches, nectarines, etc.) into a bowl and eat it.  YUM!

    When it's super hot I'll make a cucumber salad with sliced cucumbers and sour cream and a little salt and pepper...so refreshing!

    Emeril's Cold Noodle Salad

    • 1/4 cup honey
    • 1/4 cup soy sauce
    • 4 teaspoons sesame oil
    • 1 pound soba noodles, cooked until tender and refreshed in ice water image
    • 1/2 cup thinly sliced green onions, cut on the bias
    • 1/2 cup bean sprouts
    • 1/2 cup thinly sliced carrots image
    • 1/2 cup cucumber, peeled, seeded, and thinly sliced
    • 1 cup lightly crushed toasted cashews
    • 3 tablespoons chopped fresh cilantro
    • 2 tablespoons black sesame seeds

    Directions

    In a small bowl, whisk together honey, soy sauce and sesame oil. To the noodles, add green onions, bean sprouts, carrots, cucumber, cashews, cilantro, sesame seeds, and the soy mixture and mix thoroughly.

    blueberry sour cream ice cream

    love this salsa

    I also just made strawberry sour cream ice cream and it's sooo good. need to post to my blog soon but here's the recipe

    Strawberry Sour Cream Ice Cream

    from The Perfect Scoop by David Lebovitz


    Makes about 1 1/4 quarts

    1 pound fresh strawberries, rinsed and hulled

    3/4 c. sugar

    1 tbsp. vodka or kirsch (I used vodka)

    1 c. sour cream

    1 c. heavy cream

    1/2 tsp. freshly squeezed lemon juice


    Slice the strawberries and toss them in a bowl with the sugar and vodka or kirsch.  Stir until the sugar begins to dissolve.  Let stand at room temperature for 1 hour, stirring every so often.


    Pulse the strawberries and their liquid with the sour cream, heavy cream and lemon juice in a blender or food processor until almost smooth, but still slightly chunky.


    Freeze in your ice cream maker according to the manufacturer?s instructions.
