We bit the bullet and bought bikes last night. We did pay a bit more than we originally planned ($300 for each), but thought it was worth it to get a quality bike that will hopefully last us for a very long time.
Here's my bike. I love the green color!

Here is DH's. His is fancy because it has disc brakes.

We also purchased a light kit, so that we can ride our bikes to and from neighborhood events and to local restaurants! I can't wait for our inaugural ride tonight!
ETA: We went to Performance and were there for over 2 hours. They took so much time explaining bikes to us and what the advantages of buying this one over that one would be. They also did not pressure us at all to go over our price point (and they did have some bikes available around $200), but we decided we wanted to spend a bit more to get a bike that was more "all-purpose". We also got their extended warranty plan thing, which was a great deal for tune-ups and other maintenance.
Re: Bike Update
Ooooh!! I like your green color too! Good idea for the light kit. If you and your DH are planning on going out of your neighborhood, you might want to consider some helmets as well.
Congratulations!
Oh, we will be wearing helmets anytime we are on the bikes. We are both too accident prone to risk not protecting our nogin's. I got a cool helmet that has a green design on it to match my bike. Yes, I'm a dork!
No, no. Not a dork. All of my "everyday" cycling stuff coordinates (helmet and shoes). I even (only) buy yellow tires because they look the nicest with my bicycle. I even have one or two outfits that look best with my bike. As my father in law likes to say, If you aren't going to BE good, at least you can LOOK good.
I would highly recommend stopping by Performance. DH went back yesterday because he had a few questions about his bike and they were awesome. Took as much time as he needed and really explained everything.
When you get your bike, we should have a nestie bike ride. I'll work on getting in shape between now and then. We took a quick spin around the neighborhood yesterday and I just about died on hills that I didn't even realize were there. But I am very happy to see that I'll get a good workout on our evening rides! Hopefully this will help me ease into running in the fall.
