XP: dinner recipe for 8 adults/4 kids
I'm going on vacation in 2 weeks with my family. We've decided that each house hold would cook dinner at least one night while we're there. I usually only cook dinner for myself and DH so I need help! There will be 8 adults and 4 kids. 2 kids are not picky and the other 2 are pretty young so they will eat something else. I'm thinking a casserole but I don't have one in mind. Also, I don't eat red meat. Any suggestions?? TIA

I am not sure where you are going or what ingredients you might have your hands on, but you can do lots of interactive things as well -- taco bar (chicken or fish), this time of year there are a lot of fresh veggies popping up you could do some type of pasta dish with veggies and either shrimp or chicken. Let me know what you are thinking (easy, make ahead etc) and hopefully we can help.
Here's some recipes from my blog that I thought might work well but there might be more that I didn't link below. Since you said you don't eat red meat, you can always subsitute with ground turkey/chicken or turkey sausage.

Taco Bar! Just get some ground turkey and package of taco seasoning, taco shells, and cut up tomoatos, lettuce, and cheese. Have some sour cream and salsa, even guacamole if you want. Also, have tortilla chips for an app.
the other meal I like (DH's family is 12 adults, 6 kids and we have them over often) is noodles (any kind- spaghetti, bow tie, etc) sauce, parmesan, chicken breast. I serve them all seperately so everyon can build to their own tastes. I serve garlic bread and peppercini's with salad as a side.
For dessert, I'll usually grab bakery cookies and a tub of icing and some sprinkles- kids can decorate their own and all adults like cookies!
I am pretty bad with casseroles so I have no suggestions there. GL!
The only things coming to my mind are Lasagna and salad with garlic bread or a 3 cheese chicken dish with a salad and corn bread.
I love the taco bar idea and I think the kids would enjoy it. You could even change it up a bit to make fajitas for the adults if they would like that better.
PW's chicken spaghetti would be good w/ some veggies on the side.
you could do like creole.. maybe jambayala or gumbo.
We have 8 adults in my family and we make 2 (but you could make 3) spaghetti casserole dishes. Here are the ingredients for one dish (serves 5-6)
3/4 or a whole box of angel hair pasta
1/2 onion chopped ( more if you want)
1 can of Hunts Tomatoe sauce
1 lb lean ground beef
1 bag of shredded cheddar cheese
Directions:
make pasta, cook meat in skillet and cook onions. Combine meat, onions and sauce into one container. Once everything is cooked you'll do 2 layers. First layer is angel hair, then put a layer of your meat, then sprinkle some cheese (repeat) angel hair, meat-sauce-onion mixture, shredded cheese.
Cook covered for 45-50 on 325.
