Okay, world's worst interview question. We all give some trite answer we can spin in our favor. But if you weren't being judged, what is your real answer?
For me, there are two. 1) I'm egocentric. It's true. I find myself talking about #1 a lot more often than I should be. 2) Clearly, I nest way too much. I'm truly trying to work on both, but that doesn't mean I want to divulge either in an interview!
We have so much time, and so little to do! Strike that, reverse it.

Are we talking strictly work-related? I piss off too much. I put off projects until the last minute and then tell my coworkers how swamped I am. Thankfully a lot of my work is not measurable.

Definitely nesting but that's mostly out of boredom.
My real biggest weakness would be working too fast and not reviewing everything. Just like in school where the teacher always said "are you sure you don't want to look this over?" and then you get deducted for some stupid mistake, skipped question etc on a test. I do this all the time and end up realizing I made some stupid oversight while standing in my boss' office trying to explain a report/analysis to him and have to go correct it.

If I get bored I stretch things out longer than necessary...usually by tooling around on the internet (case in point today).
My lack of attention to detail is another one. Its not that I don't care, its just that I'm not anal about things being 'just so'. I think I'm realistic about what is really necessary/relevant in the field...this doesn't always translate well for the brainiacs in the office.
At my current job my biggest weakness is that I just don't give a *** about it anymore. Like the company, like the people, overall like what I do...but I know I will have to leave the company when I move. Just trying to keep in mind while I am here that what I do still reflects on me career-wise and that I'll need the recommendations and such as I move on.

And indecision/lack of confidence in my work. I put off showing things to my boss/clients b/c I am constantly second-guessing myself.
Saying no...I have a hard time saying no to people and then I take on too much and get stressed out.
Also sometimes like Hawki, I forget to double check things and then go into a meeting with errors..oops!
Claiming I know how to do stuff even if I don't. I can *usually* find a way to figure it out, but I've gotten myself into some very complicated/stressful situations by saying "Oh, I've used that program once or twice, I'm sure I can build you a new database..."
Being OCD to the points of not being able to work unless my office is super clean...which means cleaning my office (sometimes to the tune of inventing new filing systems!) before actually working on any real projects.
NOTE: The above OCD thing actually stems from a bad habit I picked up my freshman year of college. If I didn't want to work on a paper (yay procrastination!) and if I felt guilty doing something like watching TV instead of working on said paper, I would clean my dorm room. In fact, it was the way I got away with watching TV -- it became "Oh, it can be on if I'm CLEANING." That then turned into the place NEEDING to be clean in order for me to work. Seriously, if my office or desk is cluttered at all, I get super tense and can't even write a decent sentance until I clean it up. I have gotten a bit better and can now stand putting the mess in bags or a box in the closet until I'm done working and then cleaning it out...but the desk still needs to be cleared in order for me to work.

I have really high standards. I do my best to hold myself to them, and often I am able to, but I hold others to them, too, and am always disappointed when they (usually) let me down.
I know you said perfectionism is a bs answer, but that's kind of what I'm describing, no?
It's seriously a problem, and I always set out to go easier on people, but I have also heard that you need to be the kind of friend/employee/student/etc. you want to have, so I behave as a really good one, and then just feel let down when others don't reciprocate.

Mine is also taking on too much and not saying no enough. I have a tendency to overwhelm myself unnecessarily.
Also, I have a wicked fear of public speaking--mainly because I'm no good at it.
