So good!  I love these because they don't raise my blood sugar very much at all.  They're mostly protein.

The key is to a) work with the thinnest noodles and b) rinse them well.  I will usually put them in a sautee pan with chicken, veggies, a little soy, and a tiny dash of sesame oil for low-carb lo mein.

Give them a try!  They're tasty.  Their texture is a little al dente and are more like Asian style noodles then like Italian pasta.

  • BAAAAAAAAAARF!  That's all I have to say about them.  I tried them a few years ago but bought a bunch of them and ended up throwing them away.  I couldn't get past the smell of the liquid they're in or the texture (eeeeeew)...it grosses me out just thinking about them! Ick!

Confused Ok. So they're not for everyone.

But I would give them a try and see what you think, Risa. If you don't like them, then you don't like them.  You might be surprised.

As for the fragrance of the liquid, rinsing the noodles well will remove that.  Remember, tofu has no inherent flavor quality so don't skip on that when cooking these.
