i don't have a specific recipe, but i just copy the way they make them at surf n' turf here in cedar park.
season and cook several tilapia (or whatever kind of fish) filets.
use corn or flour tortillas (we like corn)
pile fish, coleslaw mix (we just get it in the bag), pico (again, we get lazy and use the premade stuff from heb), avacado slices, a splash of lime or lemon juice, and some spicy ranch dressing (can be put on the side for dipping) on a tortilla and you're done!
We do pretty much what gwynnetx does. I get some kind of firm fish (I usually use mahi mahi, but whatever you think is yummy will work), marinate it in lime juice and a little salt for 15 minutes or so, then cook it on a hot grill.
We never have the same accompaniments twice, it seems. We've used bagged coleslaw cabbage (I like the napa cabbage mix best), guac or sliced avocado, salsa, sour cream, lime juice, cheese, homemade seasoned mayo... Do what sounds yummy. They're fish tacos. You can make your own rules.
I use a technique that a nestie on this board posted once:
dice one white onion and saute in a large skillet w/ a bit of oil on medium-high heat.
once onions have softened, move them to the edges of the pan and place 2-3 fresh tilapia filets in the pan (seasoned with salt, pepper, cumin or whatever you like). Cook maybe about 5 min on each side - enough so that it's cooked through when you're done
Using a spatula, chop up the tilapia in the pan and mix with the onions.
Serve w/ your choice of tortillas and toppings. I love monterrey jack cheese and guacamole with mine.
