share dinner ideas!

for whatever reason, nothing i think of sounds that good. i need some help! trying to be healthy. and trying to cook for just 2 while keeping it pretty easy.

  • I've been trying to make more fish lately and like this breading.

    FISH:

    • 1/4  cup  all-purpose flour
    • 1/4  cup  cornmeal
    • 1  tablespoon  water
    • 1  large egg white
    • 4  (6-ounce) tilapia fillets
    • 3/4  teaspoon  salt
    • 1/2  teaspoon  chili powder
    • 1  tablespoon  olive oil
    To prepare fish, combine flour and cornmeal in a shallow dish. Combine 1 tablespoon water and egg white in a shallow dish, stirring well. Sprinkle both sides of fish evenly with salt and chili powder. Heat oil in a large nonstick skillet over medium-high heat. Dip fish in egg mixture; dredge in flour mixture. Add fish to pan; cook 2 1/2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.

  • I made stuffed chicken burgers this weekend, and I thought they came out great - I really just made it up for our tastes, but maybe it would give you an idea.  I seasoned ground chicken w/ fresh basil, oregano, and parsley.  Then I made (4) thin patties.  I covered (2) of the patties with chopped sundried tomatoes, roasted red peppers, and feta (for me) and goat cheese (for DH).  Then I topped them with the other thin patties and squeezed the edges.  Threw them on the grill & they were delish and different than the regular burger or chicken.
  • Sometimes we do appetizer dinners.  Shrimp cocktail (using frozen shrimp) and bruschetta is one of our favorites.

    We are trying to make our dinners simpler so that 1) they aren't so much work and 2) we don't eat huge portions.  So we are concentrating on a protein (grilled chicken, oven baked chicken tenders, fish, hot dog, hamburger) and a veggie (frozen, fresh steamed, fresh grilled, canned veggies, baked beans, etc.). 

    We have also been going to Harris Teeter for 6inch subs pretty often lately. 

  • I've been trying new recipes lately--simpler takes on "classic" dishes.  One was for a different (but Oh so tasty) sweet and sour chicken, the other was for a healthier version of chicken and cashew nuts.  KB--if any of the stores around you carry the Clean Eating Magazine, I'd recommend you pick it up--even if you don't necessarily clean eat.  It's chock-full of relatively easy, and so far good tasting recipes--and you can always sub where you want (ie instead of quinoa, you could always do a regular rice or potato or whatnot). 
  • we really don't do much for dinner in the summertime....sandwiches or something quick and easy...but this has also been a bad thing for us b/c we are too quick to grab snack food opposed to something healthy.

    i really need to get back into healthy eating, thinking about grilling veggies and eating those. i am about 40lbs over weight and DH doesn't eat veggies at all so it has been a little difficult on me.

  • We do a lot of chicken caesar salads in the summer. I make the caesar dressing from scratch- it's pretty easy (although of course you could also use store-bought dressing). It's something like this, and this is for an oil-based, not creamy, Caesar dressing.

    Tear up two heads of romaine. Combine 1/4 cup olive oil with 1/2 tsp garlic salt, then pour over the lettuce and stir to coat. Add 3 T red wine vinegar, 2 T lemon juice, a few dashes of Worcestershire sauce, stirring after each addition. Chop up two soft boiled eggs (I usually boil for 6 minutes for soft boiled) and add to the salad. Lastly, add approximately 1/4 cup Parmesan cheese. Top with grilled chicken or your other preferred grilled meat.

    I recently got the Mark Bittman cookbook called How To Cook Everything. There are tons and tons of recipes in there, and most of them are very easy to make. Last night I wanted to make chicken and I found lots of recipes that were very easy. It might be a cookbook worth investing in!
