Favorite side dish for a BBQ?
We are going to a BBQ this weekend. Other than potato salad what is your favorite side? What do you look forward to the most? I suck at side dishes and need some inspiration!

Corn on the cob or corn pudding either is delish! My other fav is mac and cheese.
I make an easy pasta salad that always gets rave reviews. It is just cheese tortellini, halved grape tomatoes, blanched broccoli florets, chopped red onion and poppyseed dressing.
Yep, I buy the dressing. I try to get a lower fat version Poppy Seed, but I have used at least 4 different brands and they are all yummy. My favorite is Cape Cod, but the easiest to find is Kraft.
Just add the dressing slowly. You won't need a whole bottle. And if you make it ahead of time, you will just need to add a bit more dressing when you serve it since the pasta will soak it up as it sits.
Oh, and I usually buy the bigger package of tortellini so I have slightly more pasta than veggies.
Cornbread Salad
1 cup celery
2 cucumbers
4 tomatoes
1 purple onion
1 bell pepper
1 box of Jiffy cornbread, prepared
4 slices of cooked bacon (I usually omit the bacon)
shredded cheddar cheese
dressing:
1/2 cup mayonnaise
1/2 cup sweet salad cubes (on the pickle aisle, they look like relish)
2 tablespoons sugar
2 tablespoons cider vinegar
Chop veggies, put in bowl.
Mix dressing, pour over chopped vegetables
Crumble cornbread and press into bottom of a casserole dish (if the salad will sit awhile, you can press the cornbread into the bottom of the dish so that the salad dressing doesn't soak into it and get soggy while you're waiting to serve it, if you're going to serve it fairly quickly, you can just do layers - crumbled cornbread, veggies, cheese, repeat, then toss).
