In need of a NC BBQ recipe for a party this weekend. Lots of ECU alumni so need something good! TIA

    Buy a Boston Butt pork loin. I like to trim some of the visable white fat off, but you'll never get all of it. Cool on low in a crockpot overnight, or the morning & afternoon while you're gone. Maybe just coat the bottom in a little olive oil. Other than that completely plain.

    Shred the meat up when its done and add whatever store bought (or sauce recipe you can find) sauce. I use Sweet Baby Rays and thin it down with some white vinegar.

    Crockpot BBQ

    1 large pork roast (boston butt)
    1 full recipe of Eastern NC BBQ Sauce (the only change I made was to use red pepper flakes instead of cayenne)

    Instructions:
    Salt and pepper the pork roast and place it in the crockpot, fatty side up.
    Pour about 1 1/2 cups of the BBQ sauce over the meat in the crockpot, and cook on low for 8 hours.
    Remove the bone and the top fat layer from the roast and discard.
    Pull the meat apart using a fork.
    Stir the meat into the sauce in the crockpot and allow it to sit for another half hour or longer.
