Wanna help me make a menu?

This weekend we're doing a small cookout for our families to see our home.  We're going to do burgers since that's easy enough.  What else should we have?  I want it to be impressive but easy. Here are some things I'm thinking but I welcome all ideas!

-Burgers - of course!

-Either potato salad or pasta salad (If you have suggestions for something in place of this or any awesome recipes I'd love to see them)

 -Appetizers of chips and salsa/guac

-Drinks - tea, lemonade, beer, wine

And...that's all I've got.  I'm usually good at this but I've got a million things going on so my mind is blank.   Also, if you have an idea for some type of drink in place of the wine I'd love that.

  • you could roast veggies on the BBQ - corn, zucchini, peppers, etc.  I've made this salad before, really easy and good!

    for a drink, what about a white wine sangria?  since it's served chilled, it would be more refreshing than a red wine sangria:

    or you could do lemonade, club soda, vodka, something along those lines.

    Strawberry salad 

    Touchdown Shandy (mostly lemonade with a splash of beer on top)

    We have so much time, and so little to do! Strike that, reverse it.

  • Maybe grill up a few chicken sausages for those who don't want burgers?

    Sweet potato fries!  I love the chipotle flavored ones from Alexa in the freezer section.

     Don't forget dessert!  A couple of pies should do the trick.

    I think it's all in the presentation... put the cold bottled drinks in a cool galvanized steel bucket... condiments in their own ramekins... veggies lined up on a white platter...plasticware pre-wrapped in napkins or displayed in coordinating glasses... cute table cloth... etc.

  • This is my new favorite salad! I love it soooo much!

    Instead of mayo, we use italian salad dressing! To me, perfect summer salad!!

     

    Ingredients

    • 1 (15.25 ounce) can whole kernel corn, drained
    • 1 (15.25 ounce) can white corn, drained
    • 2 tomatoes, chopped
    • 1/2 (15 ounce) can sweet peas, drained
    • 1 cucumber, diced
    • 1 purple onion, diced
    • 3 tablespoons pimentos
    • 1 cup mayonnaise
    • salt and pepper to taste

    Directions

    1. In a large bowl, mix the corn, white corn, tomatoes, sweet peas, cucumber, onion, and pimentos. Fold in the mayonnaise. Season with salt and pepper. Cover, and chill at least 1 hour in the refrigerator.
