Any suggestions? We're hosting a very small going away dinner for my friend who is moving to MA. I can't decide what to make and I'm sick of all my normal go-to dishes. Also, these are my foodie friends so it has to be extra good. Whatcha think?
Re: Menu for dinner party
If I had to go off of my head though I would do a spinach salad with goat cheese, pecans and raspberries with a raspberry vinagrette. Entree would be a chicken roulade with goat cheese and sundried tomatoes, it cooks so easily and will allow you to mingle with your guests since once it's done it needs to rest, then the presentation is lovely. For the sides some steamed baby carrots over a turnip and potato mash. For dessert maybe a berry tart just to bring the raspberries back in. Everything can be done ahead of time.
For the salad I would do some spinach with a yummy goat cheese, some nuts (I like walnuts) and some fruit. Like blackberries, grapes, strawberries, etc. Serve it with a vinegarette of some kind. MH makes a pinot noir reduction salad dressing that is to die for. I can inquire about if you'd like.
And if you want to set out something for people to snack on before dinner, I highly recommend these:

They are very good and you can make them the night before.
Let me ponder on the rest. And if you want help choosing a wine, let me know. Because I am a wine whore.
Great minds!
JINX!
LOL ya'll are funny. Looks like I've got a basic salad idea. I do lurve some goat cheese with spinach and fruit so that works.
The wine part I should be good on. I'm a bit of a wine whore myself and I'm totally going to use this as an excuse to buy several bottles.
They are a bit heavy and my real worry with this was how long they would have to sit before I serve them. I don't know that timing wise it would work out. I admit that I was thinking more of the pretty plate than anything here.
glad you liked them, I too found them to be quite tasty!
