What was for dinner tonight?
Yes, I'm avoiding doing anything productive!
On our last food post, I got great ideas for weeknight dinners. Now I'm out. So tell me what you've made recently!
Tonight I had a crock pot roast that I cooked on low for 8 hours in beef broth, rosemary, garlic, salt, and pepper. I made oven roasted potatoes, corn, and had a side salad.
And brownies for dessert

My parents suprised me by dropping by since they were in the area around dinner time and they took me out to dinner! We ate at Bertucci's and I had a Caprese salad (mozzarella and tomatoes / balsamic vinegraitte) with grilled chicken on it.
I'm proud to say this diet is working out - I gained 10 lbs on the HM and have now lost 5 of them!!
We had friends over for a pre-Canada day BBQ, so we had steak, medium rare (cooked to perfection, thanks to my wonderful HH) and veggies on the grill (red and green peppers, zucchini, onions and mushrooms, tossed in olive oil and black pepper...amazing!!) We also had potatoes tossed in paprika and pepper. Fresh homemade strawberry shortcake for dessert. It was the best meal I've had in a loooong time.
Today is Canada Day, so another BBQ tonight. This time it will be bbq ribs, baked potatoes (well, not baked but on the grill...you know what I mean) and brussel sprouts. I can't wait!
So clearly, we are not vegetarians! Are any of you, and if you are, does this kind of post offend you? I'm curious because two of our best friends don't eat meat - they are very earthy and everything is vegan and organic, right down to their shampoo and toothpaste...and they hate when we talk about grilling a big steak...haha but they are still among our closest friends. I guess opposites attract!
We had a frozen pizza-- that HH baked! I am such a bad wife.
I have no idea what we're going to eat tonight. I'm going to make crockpot pulled pork tomorrow, though; I think BIL & his wife are coming over.
Handling the finances and bills and running errands seems to suck up all of the planning brain-power that used to be devoted to planning meals. That and I'm still not used to one "real" meal not lasting a whole week (leftovers for days was one of the good things about being single)!
We're not veg - we're definately carnivores, but we have veg friends and they never comment on our meat-loving ways ;-) When they come to dinner, we just make them a meatfree version of whatever we're making. IE - I'll make a vegetarian lasagna and DH will make meatballs on the side so anyone who wants meat can still have some that way...if we do taco night, it's build your own so people can put in the ingredients they want, again with the meat separate...
We were both exhausted last night so we kept it simple. Manwhich and chips. Then we jumped in the car and got icecream.
I'm big on using organic products and green products. I am my mother's daughter.....and she is vegan and I have to admit...I tried the veg only thing and I like veggies burgers and the meatless foods you can buy BUT I really really love steak....so I'm not a vegetarian. I like what PP said, use meatless options. My mom always makes remarks about what we eat and says things like "it'll just rot in your colon anyway" lovely, I know.
My HH and I are not but 2 out of my 3 daughters are Veggie Girls thats what we call them. I do the same as the above post. We made spegetti last night and I just make it in to pans one with meat balls and one without so it isn't a big deal at all. I always do something for them as well. They know they aren't gonna change us and I have expanded our menus because of them being veggies. When we make tacos haha ours are not healthy at all I fry the meat in the shells and for the veggies I make spanish rice and fry the spanish rice in the shells. It is heartattack on a plate but delish!!!
Tonight is go out to dinner night so I am no help!!!
Ooooh Friendly's! I miss that place! I was born in MA and lived there till I was 9 and we would go to Friendly's often! I remember their clown sundaes, with the reese's pieces at the bottom and the waffle cone hat....YUM!! I want one now!
