Baked Chicken

I posted this on the whats cooking board this morning but the 2 responses I got weren't helpful.

Today is MIL's birthday and I'm cooking dinner for her and FIL. I'm making baked chicken, and I was wondering if you girls had any good recipes? I usually put salt, pepper, paprika, garlic salt, oregano, and basil on mine but I'd like to try something else. Do you girls have anything?

  • if you marinate it in italian chicken, its really good!!

  • Ingredients:

    Chicken breast (I do the thinly sliced ones)
    Bertolli's Pesto/Basil sauce
    Tomatoes
    Mozzarella

    Coat the chicken with the pesto- I just put lots on the top
    Bake for... heck, I don't know.  However long you would normally cook it.
    Top with tomato slices and then mozzarella and put back in until cheese melts.

    And be sure to use a baking thing with sides so that the oil from the pesto is contained.

    Super easy and it's our favorite.  I even made it for MIL one time and she LOVED it (which is amazing because she's pretty critical).

    I agree with the above! It tastes like you spent a lot more time on it then you actually did!  

     

  • This may be too late, but I take chicken breasts and cover them with 1-2 cans of cream of chicken soup (don't add water) and then bake. Serve it over rice.

    holy mother of god, this SOUNDS DELICIOUS!!!!!! I love pesto!!!! EEK i can't wait to try it!

  • I tend to cook it like Ashleyanne does..... and I'll serve it with pasta or something.
  • Thanks ladies! I ended up just making it the way I normally do since I already had those ingredients on hand. I'll definitely try these in the future though!

    it's SO easy.  virtually no prep and so so so yummy.  i usually do it with angel hair pasta and leave out extra pesto ;)

  • The pesto chicken does sound delightful! I think we should all share recipes on here because I'm tired of cooking the same thing for my picky husband!
