**Laura & Jillian** (Kasta Salad)

Ingredients:
1 (1 lb) box pasta, cooked to package directions
4 c. assorted fresh vegetables
2 c. cubed ham

Dressing ingredients:
1/2 c. lemon juice
1/2 c. vegetable oil
2 T. sugar
2 t. salt
1 t. oregeno
1/4 t. pepper

Directions:
Vigorously shake dressing ingredients in a jar.  Pour over pasta, vegetables, and ham.  Mix well and refrigerate at least three hours.

Notes:
For vegetables, I typically use broccoli, tomatoes, cucumbers, carrots, red peppers, red onions.
I quite often make 50%-100% extra dressing because sometimes it seems a little dry with just the typical amount.  If you make extra, just don't pour it all on at once.  Pour some on, mix it up, and add more to taste.
This recipe serves 12.  I usually make it for a smaller crowd, so I half the recipe.

Enjoy!

  • That dressing is the bomb.  I'd do shots of it, if I thought I could get away with it.

    Thanks!!!

I use Meijer brand which comes in a green container like this (except I buy a smaller bottle).

  • Ok :o) Just making sure it wasn't fresh squeezed or something.

    Haha... I'm not that motivated!

I don't think I would ever make a recipie that calls for fresh squeezed anything.

I used one of those yellow things once, but i think the green bottles are cheaper so that's what i've been using now.

I didn't think anyone would, outside of a restaurant setting, until I met my husband. He's intensely motivated in the kitchen when he wants to be. Smile
