Appetizer Recipe Needed

I have to bring an appetizer to a picnic tomorrow and am having trouble deciding on what to brng. They already have chips and salsa and taco salad. Any ideas/recipes? It has to be something that can sit outside. Thanks Ladies!

  • My go-to is a pesto pasta that doesn't have to be hot to be enjoyed - and it holds well.

    Drain and rinse a can of kidney beans,

    Cook a lb of pasta (I use Buitoni's 3-cheese tortellini), toss the kidney beans into the boiling water for the last minute or two just to get that 'canned' taste out of them.

    Drain pasta and beans, toss with pesto sauce - serve with extra shredded parmesan on the side (the pesto usually already has parmesan in it).

    If I'm feeling fancy, I'll add some sauteed spinach & onion to the mix, or some fresh tomatoes that are diced and lightly salted.
