Good Monday Morning...cooking question
Hello chickies! I hope everyone had a safe holiday and that you guys have today off like I do!
I have a question about baked beans. My MILs 60th birthday party is Saturday. I said that I would make baked beans...problem is I've never mad them before. ANYWAY, I found a recipe in an old western cook book my mom is giving my MIL as a gift (it's a country/western themed party).
1) it says to soak them over night...I'm assuming just shove them in a pot full of water?
2) they want me to slow cook them (8 hours) in a casserole dish...can I stick them in my crock pot instead? That would work the same right?

Hmm...that's the old fashioned way... i've never done it that way anytime it says soak over night, i say kiss off. I would imagine that's all you do.
I don't make baked beans, but my SIL makes the most amazing bean(s), bacon, i have no idea what else dish that is to die for. BUT I think the crockpot would work just fine.
I've heard that many think the main reason to soak beans is to minimize gas. That's the main reason I soak all of my beans before cooking! I don't need to have DH tooting all night!!! It also gets rid of the "indigestible complex sugars (oligosaccharides) from the outer coating of the beans".
As with boiling ribs prior to BBQ'ing, soaking the beans allows for shorter cooking times. The less time the beans are cooked, you get the most out of the protiens, vitimins and minerals that the beans have.
I love my crockpot, and I use it all the time!! Cooking beans is one of the things I use it for! You can just turn it on low and forget about it!!!

DH and I are making red beans and rice today, so we actually had to soak our beans last night! We just put the beans in a big plastic bowl with a couple of tablespoons of kosher salt dissolved into about 3 quarts of water, covered it in plastic wrap, and set it on top of the fridge for the night.
I think anytime something says "slow cook" I say "crockpot!"

I agree! However, I'm making baked beans for over 60 people and I'm not about to take out a loan just to buy canned beans.
Thanks ladies for the suggestions. I thought you had to soak them because they are dry beans, but I guess cooking them in the molasses and such would re-hydrate them. *shrug* This is my first attempt so wish me luck!
This is my experience with soaking vs. not soaking - when we soak our beans the cooking time is 2 hours. When we don't soak them the cooking time is 6 hours. Soo... we always soak.
I have a recipe for baked beans that starts with a 55 oz. can of Busch's Baked Beans... it's sooooo good. We're making them for a bbq this weekend.
