Recipes for pork?

A local grocery store has a 5 for $25 sale every so often on meat.  Well, I love to take advantage of it because it is a great deal.  I get $7 packages of meat for $5....and I separate it and freeze it.

Well, two of the packages I bought (so 4 meals) are pork chops.  And DH doesn't really love pork chops.  So I need recipes that make them really yummy. I looked online, but there are so many options listed.  Any recipes you have for pork chops?

  • This month's issue of Cooking Light had a lot of pork recipes.  I haven't tried any, but I will say that any recipe I've tried from that magazine has been tasty and worth the effort.

    We don't eat pork (neither of us is fond of it), but when we buy a chunk of meat that we don't know what to do with, our fall back is always making it into pulled (beef, pork, chicken, etc.).  Super super easy!  Throw it into a Crock Pot or other slow cooker with a bottle of bbq sauce (enough to coat but not cover) and a little water and it falls apart on it's own.  6 to 8 hours is good on low heat.  Pull it apart using two forks about a half hour before you want to eat it.  That gives it time to further marinate in the sauces.

  • I got nothing to add as I don't like white pork.  But I'm uber jealous of a 5 for $25 sale on meat!
  • We don't really eat pork that much anymore but here are a few suggestions for you:

    I marinade pork in melted butter with a little bit of cinnamon and sugar. You can either grill or bake. Then I use either blueberry pie filling (heated) as a sauce or you can use fresh berries melted down with butter and sugar. The blueberry topping mixed with the sweeter tasting pork is really yummy!

    Shake 'n' Bake for pork is tasty as well when served with apple sauce, this is how my Mom makes pork chops!

    You could also do BBQ style and either marinade the pork in BBQ sauce or do a Caribbean style rub. Both would be good! If I am making pulled pork I leave it in the crock pot with a full jar of BBQ sauce and a full beer for 6+ hours.This makes the pork so tender!

  • I have a recipe I use a lot.  It's out of a weight watchers cookbook so it's pretty healthy and my hubby loves it.

     Heat 4 teaspoons of honey on the stove until it's a liquid.  Add 1 teaspoon cider vinegar, 1/4 cup dijon mustard, and salt and pepper.  Put 4 pork chops in a baggie and pour honey mustard mixture over the top.  Seal baggie and refriderate over night (or at least a couple hours).  Broil pork chops about 7 minutes on each side (depends how big they are).  Super easy and yummy!

  • DH marinates porkchops in red wine with onions and green peppers and then bakes them in the oven. It doesn't sound like a good combination but they are SOOOOOO good! I generally season them or use bread crumbs and seasoning and bake them with garlic bread and some kind of veggie. 

  • My favorite pork chop recipe is pork chops and mango salsa.  Pretty easy and quick.  Make a spice rub of kosher salt, black pepper, cumin, and chipotle and ancho chili powder (I kind of just throw some together, but make sure to salt it well).  Blot the pork chops with a paper towel so that the rub stays and then rub a little on both sides of the pork chops.  Fry in a heavy pan without oil for about 5-8 minutes on both sides (fry one side first and then flip).  Makes really juicy pork chops.  This also works with other types of flavorings and such.

     Mango salsa:

    Dice 1 mango, 1/2 medium onion, 1 jalapeno, cilantro.  Mix in a bowl, add the juice of 1 lime, and a few shakes of hot sauce.  Salt and pepper to taste.  Let it sit for about an hour in the fridge to let the flavors soak in and then serve on top of or on the side of the pork.  It's really easy and it's SO good with pork.  I love making this because it's really versatile.  If you don't have mangos you can use blueberies or pineapples or whatever else you have.
