Kitchen update..

My camera and computer at home are not cooperating for me to upload pics.  I'm going to work on it tonight and hopefully get my blog post about the burgers with pics up there.

Lemon Yogurt Sherbert: I made this using the Ice Cream maker attachment for my Kitchen Aide.  It was the first time I was using any of the machine/attachments etc, so I chose an easy recipe.  It's a little bit of work, you have to make sure the bowl (attachment) is in the freezer for min. 15 hours, then you have to make the mix and refrige that for 3 hours... then make it and then freeze for 3 hours..  BUT we had some last night and it was really good!!!  I would use less zest next time, but for a first time try, I was happy with it.  Of course with the heat, i'd pretty much each anything that came out of the freezer!

  • I am OBSESSED with my KitchenAid ice cream attachment...and it's starting to show, LOL. I made peppermint ice cream a few weeks ago that was unbelievable and it was a custard base, and I had the similar setbacks you did - chilling the mix for a few hours and then letting it set up and freeze in the fridge.

    But for the Fourth, I made banana ice cream and it was so much easier. It just called for bananas (obvs), sugar, skim milk, cream, nutmeg and vanilla, and it literally hardened up right in the bowl. Sort of a "soft serve" consistency, but I let it freeze overnight anyway. So good!

    THe lemon yogurt sherbert is super easy, fresh lemon juice, lemon zest, low fat plain yogurt and 1 cup of sugar. 

    I think my next venture will be a vanilla ice cream with mini peanut butter milk chocolate baking bits in it :).  Or maybe dark chocolate mint baking bits...

  • I love my icecream attachment too!  I just made chocolate ganache ice cream for my DH's birthday - soooo good!!!
