I made my first loaf of zucchini bread last night (I usually make it all summer long). I was so excited to use my Kitchen Aide that I forgot to add the sugar. DOH! It came out okay, and it's still edible, just not as "sweet" as usual. Which may be a good thing.
Needless to say i have ALOT of zucchini at home, so i'll be making more over the weekend, but i will not be forgetting the sugar.
Um, I'm going to blame it on the heat... it's making me forgetful

I don't know what I'm talking about so please don't flame me. But can you put some sort of glaze on it to sweeten it up a little? Not sure if zucchini bread would taste good that way but it's worth a shot.
Recipe is up in my blog
Cindy... yes, you could probably do a glaze or something like that, I was thinking some sweet butter or something like that would probably help. Really it's not bad though.
Tami...maybe I just will
