Since I have been working a few nights a week I've been trying to plan meals ahead of time that I can have ready for DH to avoid him just going out to eat when I'm not home. The best I've come up with so far is crockpot meals because I can start them that morning or at lunch and they are ready when he gets home and then I can eat when I get home. He will cook but nothing that involves lots of ingredients or takes a long time. Any ideas on easy recipes or crockpot recipes?

I love cooking in my crockpot.
One easy meal is go to walmart, go to the meat section. They have a prepackaged pot roast (complete with meat, seasoning and veggies). You just throw it in with some water and let it cook. It's actually really tasty too. I usually dont' use their seasoning and instead use a cup and a half of water and some french onion soup mix instead.
BBQ chicken is also really easy. I just thrown three or four chicken breasts in the crockpot with 1/4 cup of brown sugar, 2 tbsps of soy sauce (or Dale's seasonsing), and a bottle of BBQ sauce. Low for 8 hours and done.

I've made the Chicken San Marco (I think that's what it's called) and it was fabulous.

It has tons of casseroles and fast meals that are husband friendly.
I'd love a chicken and broccoli recipe if you have it! There is a frozen meal like this that I buy but I hate making frozen meals.
