Recipe for your fav cucumber salad

We're throwing a surprise "Mother of the Bride" shower for a co-worker in our department on Wednesday.  She always organizes baby and bridal showers for everyone and her daughter is getting married in 3 weeks and we decided to throw a shower for her too!

Anywho - I told everyone I would bring a cold salad and I'm thinking something along the lines of a creamy cucumber salad.  No tomatoes please - I'm taking cherry tomato poppers too, so I don't want to kill them with tomatoes.

If you have a favorite cucumber salad recipe you're willing to share, please throw it out here.

  • I dont know any good cucumber salad recipes but maybe try a 7-layer dip. I always love it when someone brings it to parties.
  • I make a decent cucumber salad I think!

    I don't know exact measurements... so just use as much as you need to get the desired consistency.

    Peel and slice cucumbers

    Make the yum yum sauce-- mayo (around have a jar)... and whisk in milk until you have it as thick as you'd like. add in garlic powder, black pepper, and a little paprika. 

    Stir it all together and BAM! it's delish. 

  • As soon as I get the recipe from my sister-in-law, I'll post it.  Hers is AWESOME!!!  I think it has dillweed in it (hahahahaha, I'm such a little kid... I always crack up at "dillweed")

    Thanks Sarah!  I used this and combined it with another recipe I found online.  I just added a couple of ingredients from the other recipe like some dry yellow mustard and lemon juice along with a few green onions.  Today's the big day...hoping it's a big hit!  Thank you for sharing!!

    Sara - I still want your SIL's recipe if you can get your hands on it.  I have my class reunion coming up this weekend and think a cucumber salad would be good to take for the picnic. 

  • I know the ingredients, but I'll have to get the amounts.... Ingredients are as follows:  mayo, milk, cucumbers (obviously), sugar, and dillweed.  Some people add onions, but I hate onions, so I always leave them out.  I'll get the amounts to add this evening.
